Dumpling (Jiao Zi)

8 cups Honor Dumpling Flour   
2 1/2 cups cold water   
1 teaspoon salt

Dissolve salt in water. Add 2 cups of water to flour and stir. Add remaining water slowly in steady stream, knead thoroughly.

Divide the dough in half. Form dough into a rope, about 1 inch in diameter. Cut rope into pieces in every 1 cm. Form each piece of dough into balls and use rolling pin to form into round, flat wrapper about 3 inches in diameter. Fill the dumplings wrapper with different fillings as you like, boil in water or steam until piping hot throughout.

Tips: Tougher dough is easier to fill.
