Longkou, also known as Lungkow Funsee, is a Chinese glass noodle made from mung bean starch and water. Tender, smooth and chewy when prepared, this vermicelli works in stir fries, noodle soups and salads. How to prepare Longkou glass noodles for soups and salads

For stir fries or soup, bring a saucepan or kettle of water to the boil. Cut the mass of noodles in half crosswise and place it in another saucepan. Pour boiling water over the noodles and leave them to soak for about 15 minutes. Bring the saucepan containing the noodles to the boil, then drain well. Add the drained noodles to your stir fry or soup during the final two minutes of cooking.
