Mae Ploy Massaman Curry Paste with aromatic Thai spices

Make a spicy, fragrant curry at home with Mae Ploy Massaman Curry Paste. Made in Thailand, this 400g tub combines lemongrass, garlic, dried red chilli and shallot with galangal and a distinctive spice blend. Cardamom, cinnamon and nutmeg sit alongside coriander seed, cumin and kaffir lime peel, giving you a curry base with more than chilli alone.

Lemongrass makes up 22% of the paste, followed by garlic at 19%, dried red chilli at 14% and shallot at 14%. Shrimp paste adds a savoury element. No preservatives or colourants are added, and the product is Halal. It contains shrimp, so it is not suitable for vegetarian or vegan cooking or for anyone with a crustacean allergy.

Choose Massaman when you want a paste for a coconut curry with potatoes, onion and peanuts. This is a cooking ingredient rather than a finished sauce: combine it with the ingredients in your recipe before serving. Browse our curry pastes for other varieties to try on another cooking day.

How to prepare Mae Ploy Massaman curry

Start by measuring your paste, coconut milk and other ingredients. The suggested recipe uses 50g of curry paste with 200g of meat, potatoes, onion and peanuts. Keeping everything ready before cooking makes it easier to follow the sequence and add each ingredient at the right stage.

  1. Stir fry 50g of Massaman curry paste with 200g of coconut milk.
  2. Stir in another 200g of coconut milk and heat until boiling.
  3. Add 200g of meat and continue cooking until the meat is fully cooked.
  4. Add 100g of potatoes, 50g of onion, 10g of peanuts and 100g of water. Continue cooking until the vegetables are soft.
  5. Add one tablespoon of tamarind juice and one tablespoon of sugar.

The coconut milk is added in two stages, so keep the second measured amount ready rather than pouring it all in at the start. Tamarind juice and sugar are added at the end of the suggested method. Follow the current packaging instructions if they differ from these directions.

For a milder flavour, use half the suggested amount of paste, 25g instead of 50g. This lets you reduce the quantity of the spicy paste without changing which curry variety you are cooking. Choose the amount that suits your taste and check the packaging for further preparation guidance.

Serve the finished Massaman curry with cooked rice or vermicelli from our noodle range. Both serving options let you enjoy the coconut curry alongside a separate accompaniment. Check the labels of every additional ingredient before preparing the meal for someone with a food allergy. The suggested recipe includes peanuts in addition to the shrimp already present in the paste.
