Method
- Slice chicken thigh thinly and toss with 1 tbsp light soy, 1 tsp Shaoxing wine and a pinch of cornflour. Leave for 5 minutes.
- Fry the chicken in a hot wok with a little oil until browned, add 3 chopped garlic cloves, 1 tbsp oyster sauce and 1 tsp dark soy, toss for 1 minute, then set aside.
- Add more oil, scramble 3 beaten eggs until just set, then tip in the cold rice and break it up against the hot wok.

Method
- Marinate 250g thin-sliced beef with 1 tbsp light soy, 1 tsp Shaoxing wine, 1 tsp cornflour and 1 tsp oil for 10 minutes.
- Cook the noodles per the packet, rinse in cold water and drain very well so they fry rather than steam.
- Sear the beef in a smoking-hot wok for 90 seconds, then remove.
- Stir-fry sliced onion for 1 minute, add noodles, then 1 tbsp oyster sauce, 1 tbsp light soy and 1 tsp dark soy. Toss until the noodles are coated and glossy.
- Return the beef, add a big handful of beansprouts, toss 30 seconds, finish with sesame oil and serve immediately.

- Cut 400g tofu into 2cm cubes and slide into lightly salted hot water to sit while you cook, this keeps it intact.
- Brown 150g mince in oil, then add 1.5 tbsp doubanjiang, 1 tsp fermented black beans and 2 chopped garlic cloves. Fry 1 minute until the oil turns red.
- Pour in 200ml water or stock plus 1 tbsp light soy, bring to a simmer.
- Drain the tofu and add it, simmer 3 minutes without stirring hard, then thicken with 1 tsp cornflour mixed into 2 tbsp cold water.
- Finish with toasted ground Sichuan peppercorns and spring onion. Serve with plenty of steamed rice.

Method
- Soak a nest of glass noodles and a small handful of dried wood ear in hot water for 10 minutes, then drain.
- Bring 700ml chicken stock to the boil with 1 tsp bouillon powder, 1 tbsp light soy and 1/2 tsp white pepper.
