Mama Sita’s Kare Kare Mix for rich Filipino peanut stew

Make a thick, savoury peanut sauce for a comforting Filipino stew with Mama Sita’s Kare Kare Mix. Each individual 50g pouch contains a seasoning mix made with 61% peanuts, rice flour and annatto seeds, alongside cane sugar, salt and corn starch. Made in the Philippines, it provides a peanut sauce base for bringing tender oxtail and vegetables together in one dish.

Kare kare is a Filipino stew known for its rich, thick peanut sauce and is often served on special occasions. Oxtail is a traditional choice, while some versions combine oxtail and ox tripe. Vegetables such as long green beans, aubergine, bok choy, tomatoes and okra make the finished dish a varied bowl of meat, vegetables and sauce.

The annatto seeds, also known as achuete, are part of the mix, so you can build your stew around a prepared seasoning base rather than measuring out each dry ingredient separately. Explore our Filipino groceries for more ingredients to serve alongside your kare kare.

How to cook kare kare with Mama Sita’s peanut sauce mix

For an oxtail kare kare, use one 50g pouch with 1kg oxtail, 2.5 litres water, 200g long green beans, 200g aubergine, 130g peanut butter, 200g bok choy leaves, three tomatoes and six okra. Have salt available to season to taste, and sautéed shrimp paste, or bagoong, to serve separately. Cut the vegetables into manageable pieces before starting.

  1. Boil the oxtail in the water. Lower the heat and simmer until the meat is very tender, adding water as needed and leaving about three cups of broth.
  2. Increase the heat, add the tomatoes, okra, aubergine and long green beans, and cook for two minutes.
  3. In a bowl, combine the Mama Sita’s mix, peanut butter and one cup of broth. Mix until smooth before adding it to the simmering oxtail.
  4. Continue cooking until the sauce thickens. Add the bok choy leaves and cook for three minutes.
  5. Season with salt to taste and serve with rice and sautéed shrimp paste.

There is no fixed simmering time for the oxtail in these instructions: cook it until very tender before moving on to the vegetables. Mixing the powder with peanut butter and broth in a separate bowl helps you combine the sauce ingredients smoothly before they enter the pot. Follow the directions on your packet if they differ.

Serve the stew with your choice from our rice collection, allowing the thick peanut sauce to accompany each spoonful. Browse our sauces collection when planning accompaniments. Check the ingredients of any additional peanut butter or shrimp paste you use, particularly when cooking for someone with allergies.

Keep the unopened mix in a cool, dry place. Check the packaging for the best before date and any further storage instructions. The pouch contains the dry sauce mix only; the meat, vegetables, peanut butter and other recipe ingredients are added separately.
