How to cook Super Q Special Palabok noodles
Allow time for soaking, boiling and resting the noodles before serving. The resting stage takes place in the cooking water, so do not drain the noodles immediately after boiling.
- Soak 500g of Super Q Special Palabok in tap water for 10 minutes.
- Boil the noodles in water for 8 to 10 minutes, or until tender, then turn off the heat.
- Stir to loosen the noodles. Do not drain at this stage. Leave them in the water for another 15 to 30 minutes.
- Drain and transfer to a plate. Pour over the prepared sauce, add your toppings and serve with patis and calamansi.
Preparing the palabok sauce
For the sauce, gather 1 tablespoon of cooking oil, 1 chopped red onion, 2 shrimp broth cubes, 5 cups of water and 2 tablespoons of patis, or fish sauce. You will also need achuete water for colour, plus half a cup of flour and half a cup of cornflour dissolved in a small amount of water.
Please refer to product packaging for the recommended achuete water quantity and full sauce instructions. Browse our cooking oils and flour collection when choosing ingredients for the recipe.
- Sauté the chopped red onion and shrimp broth cubes in the cooking oil.
- Add 5 cups of water, followed by 2 tablespoons of patis.
- Add the achuete water gradually until you reach your desired colour.
- Once boiling, lower the heat. Slowly pour in the dissolved flour and cornflour mixture while stirring.
- Continue stirring for 10 minutes, or until the sauce thickens.
Adding the palabok toppings
For the topping selection, prepare a quarter of a cup of minced garlic, sautéed in oil until light brown; 250g of shrimp, boiled in lightly salted water and shelled once cooked; 3 cups of flaked, toasted smoked fish, or tinapa; and 250g of crushed chicharon. Add 3 sliced hard boiled eggs and half a cup of boiled, chopped pechay Baguio.
Cook the shrimp thoroughly before adding it to the dish. Arrange the toppings over the sauced noodles and serve with patis and calamansi. Check the labels of every ingredient when cooking for someone with an allergy, as this serving recipe includes shrimp, fish, egg and flour.
